Kale Quinoa Bowl

Kale Quinoa Bowl
2 cups water
1 cup Quinoa
1 bunch of kale, washed, chopped into bite sized chunks
1 lemon, zested and juiced
2 green onions
1 tablespoon olive oil
3 tablespoons toasted sliced almonds
1/4 cup feta cheese
1/4 cup dried cranberries
salt and pepper
Bring 2 cups of water to a boil in covered pot with a pinch of salt.
Add Quinoa, lower heat to a simmer and cover for 8-10 minutes.
At that point (there is still water left, the quinoa isn't quite done) add the Kale to the pot, cover and let simmer 5 more minutes.
Turn off the heat and let sit covered 5 minutes.
Add half the lemon juice with zest, green onion, olive oil, nuts and cheese to the pot and mix together.
Transfer to a bowl and top with the remaining ingredients.
Serve warm or room temperature.
