I found this amazing from scratch recipe while searching for cinnamon rolls from scratch that didn't require yeast and couldbe done in less than an hour. May I present:
Cinnamon Rolls (No Yeast)
dough:
2 cups All purpose Flour
2 Tablespoons Sugar
4 teaspoons Baking Powder
1 teaspoon Salt
3 Tablespoons Butter (COLD and cut into tiny cubes)
3/4 Milk
filling:
4 Tablespoons Butter (softened/melted)
1 cup Brown Sugar
1 Tablespoon Cinnamon (feel free to add more, I always do)
Preheat oven to 400 degrees
For Filling; in a small bowl combine softened butter, brown sugar and cinnamon to form a crumbly mixture
Sprinkle 1/2 of mixture into bottom of baking pan(s).
In a large bowl mix dry dough ingredients.
'Cut' butter into dry ingredients, use your hands to incorporate small butter chunks into the dry mixture.
Create a well in your butter/dry mix and add the milk to the well. Mix together until just formed.
Roll out dough on a lightly floured surface until an approximately 1/4" thick rectangle.
Spread the remaining filling on the dough. Roll up your rectangle to create a long roll.
Using a sharp knife slice into rolls (12-18 depending on how thick you want your cinnamon rolls)
Bake 20-25 min in a 400 degree oven.
Top with your favorite icing ( I prefer cream cheese) and enjoy (once cool).
Tip: For icing combine 1 oz cream cheese (softened) & 2 T Butter (softened) & 1/2 cup (or more) powdered sugar with a few drops of vanilla extract. Cream it all together, add more or less powdered sugar for desired cosistancy and serve on top cinnamon rolls :)
