I've had a few requests for this recipe, and I've finally tweaked it enough that I'm really really satisfied with how this last batch turned out. Everyone loved them so I hope you do too! I used homemade raspberry jam but any brand should work fine.
Dark Chocolate Raspberry Bars
18 servings - more or less depending on how big you cut them.
1 cup all purpose Flour
1 cup quick cooking oats
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup packed brown sugar (light or dark)
5 tablespoons SOFTENED butter
1 cup dark chocolate chips (chopped)
10 oz raspberry jam
Preheat oven to 375 degrees.
Combine flour, oats, baking soda, and salt in a small bowl and stir well with a whisk.
In a different bowl cream together sugar and butter until smooth. Add the flour mixture and stir until well blended. (the mix should be crumbly). Remove 3/4cup of the dough and toss with your dark chocolate chips. Set aside.
Press the remaining dough into your pan (8x8 or 10x5 or whatever you have) as evenly and as compact as possible. Spread the jam evenly on top. Sprinkle the top with the chocolate chip mixture. Bake at 375 for 30 minutes or until the top is slighly browned. Cool completely before cutting.
Happy cooking!
SIDE NOTE: 197 calories per bar assuming 18 servings, I've been calorie counting and so far have lost 10 lbs! As a result I may try to make some of my other recipes a bit healthier before posting them on here.
