Angela's Red Beans and Rice

I came up with this recipe after researching several different ways to make it. I love how it turns out and it's super tasty everytime. Angela's Red Beans and Rice 1lb Dried red beans (soaked 8+ hours OR overnight)
1/2 - 1 onion - diced
3 stalks of celery - diced
3+ cloves of garlic (I love garlic so I use at least 5) - minced 1 lb smoked sausage - sliced 4 cups cooked rice
Your favorite cajun seasoning (or cayenne pepper)
Rinse beans and fill pot with enough water to cover the beans by 1 inch, Simmer 45 minutes.
Cook sausage in skillet over medium heat until browned, Transfer to bean pot with a slotted spoon (Saving the grease in the skillet) Cook onion and celery in 'sausage juice' over medium heat until tender. Then add garlic and cook another 2-3 minutes. Add the veggies to the pot and desired amount of seasoning. Let beans cook another 2 hours at a low simmer (beans should cook around 2.5-3 hours total).
Serve over rice and enjoy! (Also good when served with cornbread)
