Jumbalisa

I'm going to share with you one of my go to meals. It's really easy yet people seeme to be impressed. You can make it with rice or pasta. My roommates in O-309 dubbed it Jumbalisa or Jumbapasta depending on how you make it. It can be a quick dish (30 min or less) if you use instand rice like I used to.

JUMBALISA (JUMBAPASTA)

1-2Tablespoons Olive Oil

Chopped Onion

Chopped Celery

Chopped Bell Pepper

Cayenne Pepper (to taste)

Optional: Garlic powder, dried basil, dried oregano (to taste)

1 Large can Diced Tomatoes

1-2 cups Water (equal to whatever rice/pasta you're using)

Rice (or Pasta)

Polish Keilbasa (Pork, turkey or beef all works, shouldbe the already cooked variety) Sliced

Heat olive oill in large skillet or pot. Add chopped veggies and saute over medium heat until soft. Add desired seasonings.

Add tomatoes and water and bring to a boil. Add your starch(rice or pasta) and make sure it's covered by the water. Cover and simmer for required time. (once again based on your starch).

Once your starch is cooked add sliced kielbasa to the the top to warm for about 5 minutes. Stir everything together and turn off heat.

Serve warm.

Tip: This is a very flexible recipe, I have added leftover chicken, broccoli, different peppers and parsley to this and it's always delicious. Feel free to experiement and let me know what you come up with!
